As winter approaches, it'll be time to harvest some of those healthy greens from your veggie patch. Try making this awesome soup with your crop (something I've done with produce from my Café Planters).
Grow broccoli, celery, and peas in your Glowpear, and either cultivate or purchase your favorite type of garlic and potatoes to mix with the rest of the ingredients for this hearty winter warmer that serves 4 people:
Ingredients:
- 3 large broccoli heads and stems (plus any tender leaves)
- 3 celery stems including the tops
- 2 medium-sized potatoes
- 1-2 cups of green peas
- 2-3 cloves of garlic
- 2 cups of chicken or vegetable stock
- 50g butter (or 2 tablespoons of olive oil)
- 150g sour cream (or cream)
- Parmesan or blue cheese to serve
Roughly chop the broccoli, celery, potato, and add to a large stockpot with the peeled garlic cloves, butter, and stock.
Add enough extra water to just cover the chopped vegetables, and then bring the pot to the boil. Once boiling rapidly, reduce to medium heat to simmer, and cook until the vegetables are soft.
Stir in the peas and sour cream for 1 minute, and then remove from the heat. Puree the ingredients with a stick processor (or similar).
Season to taste, and serve while hot with a sprinkle of parmesan or blue cheese (or another cheese of your choice) and cracked black pepper.
I paired an earthy pinot noir with this soup, making my cool evening meal complete!
