Darren Purchese is the owner and creator behind Melbourne’s Burch & Purchese Sweet Studio Down Under.
He is one of most respected pastry chefs working in Australia today and is renowned for his exquisite and extravagant sweet creations. Darren skillfully balances flavours, texture, and modern methods, to produce revolutionary dessert concepts for hospitality events and his flagship shop in South Yarra.
Since its inception ten years ago, Burch & Purchese has become the go-to dessert and sweet destination in Melbourne. Darren, and his wife Cath Claringbold, Burch & Purchese Co-Food Director, recently made the decision to turn their retail store on Chapel Street into an online business. The pandemic meant the business had to adapt and evolve. Now there are benefits such as; a zero waste approach; a bigger menu; and made to order options which means the business will continue to sweeten the city well into the next decade.
Darren’s customers, fans and client list all have one thing in common; they’re hooked on his unique and delicious list of creations. A natural host and accomplished public speaker, Darren is an author of five cookbooks and is a regular on TV (most notably Masterchef Australia).
Darren and Cath live close to work in an apartment, but this doesn’t mean they can’t have home grown produce. Glowpears help them use their balcony spaces, which are filled with fresh veggies, leafy greens for salads, and herbs.
The couple also produce food content in the form of cooking videos and social posts from their home, and they love to incorporate their luscious Café Planters into some shots.
